Healthy Gingerbread Cookies
Occasionally I discover a new food and I simply fall in love! Maybe I shouldn’t say new but something that hasn’t been in my normal routine. Lately I’ve been enlivened by a couple of foods. One is ginger. I put it in my juices. Ginger is a wonderful food. I also am totally loving black strap molasses. And what better time than Christmas to have that happen?! Molasses equals all the goodness that sugar doesn’t. It is loaded with iron, calcium, magnesium, and manganese. Molasses also has a low glycemic index. So these Christmas treats are packed with both ginger and molasses. And this wonderful healthy recipe for gingerbread cookies might just be a new family favorite for you.
Healthy Gingerbread Cookies

Ingredients
- 1/2 C. black strap molasses
- 1/4 C. pure maple syrup
- 3 Tbs. butter
- 2 Tbs. milk (preferably pastured)
- 3 C. sprouted wheat flour
- 1/2 tsp. cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. ground cloves
- 1/2 tsp. ground nutmeg
- 1/2 tsp. salt
- 1/2 tsp baking soda
Instructions
- Preheat oven to 350 degrees.
- Sift together dry ingredients.
- Add other ingredients and mix.
- Roll out on lightly floured surface, to 1/4 inch thick.
- Cut with cookie cutter.
- Bake for 8 to 10 minutes.

Dietary Modifications
To make this recipe vegan or paleo approved, use coconut oil instead of butter and use coconut or almond milk in place of milk.
