Occasionally I discover a new food and I simply fall in love! Ok maybe I shouldn’t say new but something that hasn’t been in my normal routine. Lately I’ve been enlivened by a couple of foods.
One is ginger. I put it in my juices. I will post a wonderful juice recipe later. Ginger is a wonderful food.
I also am totally loving black strap mollasses. And what better time than Christmas to have that happen?!
Molasses equals all the goodness that sugar doesn’t. It is loaded with iron, calcium, magnesium, and manganese. Molasses also has a low glycemic index.
So this year’s Christmas treats are packed with both ginger and molasses. And this wonderful healthy recipe for gingerbread men might just be a new family favorite.
1/2 C. black strap molasses
1/4 C. pure maple syrup
3 Tbs. butter
2 Tbs. milk (preferably pastured)
3 C. sprouted wheat flour
1/2 tsp. cinnamon
1/2 tsp. ground ginger
1/2 tsp. ground cloves
1/2 tsp. ground nutmeg
1/2 tsp. salt
1/2 tsp baking soda
Sift together dry ingredients. Add other ingredients and mix. Roll out on lightly floured surface, to 1/4 inch thick. Cut with cookie cutter. Bake for 8 minutes at 350 degrees.
