I always seem to forget how much I love peaches. I generally say strawberries are my very favorite fruit. But then peach season rolls around and suddenly I can’t stop buying and eating them. They go on my cereal, in my smoothies, on my pancakes, and in my crepes. I freeze peaches and can peaches for later. I create desserts all around peaches…. I’m beginning to wonder if peaches aren’t a favorite over strawberries….. hmmm….
Here is my latest creation with the glorious peach.
Fresh Peach Pie
For the crust I use this recipe Sprouted Melt in Your Mouth Pie Crust. It is divine!
For the filling…
1 C. Maple syrup (like this)
1/4 tsp. Sea salt (like this)
3 Tbs. Gelatin (find it here)
juice from 1 lemon
1 C. water
10-12 peaches (or enough to fill up your pie)
Peel and slice or cube peaches. (I sliced mine.) Layer neatly in pie crust. Set aside. Heat syrup, salt, lemon juice, and water on stove top. Slowly whisk in gelatin. Pour over pie. Refrigerate. Enjoy!
