The holidays are such a difficult time to eat healthy. All of the fun decorative treats are almost too much to resist. But this year I am turning a new leaf. My goal is to make only healthy treats. Does that mean my kids will go without Halloween candy, and pumpkin pie. Absolutely not. But I am going to do my part to make it healthier. And I am starting with avocado deviled spider eggs.
Does it matter what kind of eggs you use? Absolutely! I wish I could tell you that organic cage free eggs from the grocery store are an excellent source…. they aren’t. But they are better than regular eggs. Organic is always better. If you take a store bought egg and compare the color and quality of it to a farmers market egg, or if you are fortunate enough to to have chickens of your own, you will find that the egg from the farmer’s market has a much darker yolk. You will also find that the egg white is thicker and stronger. The store bought egg will be very pale yellow and have a very runny white. I know this is a difficult item to switch out but it is worth it if you can.
I used equal portions of egg yolk and avocado. If you aren’t an avocado fan, then use half as much avocado as egg yolk. Use the rest of your ingredient measurements to fit your taste.
